Oleuropein

is found in green olives, olive leaves, and argan oil.

It is a type of phenolic bitter compound responsible of the bitter flavor in high quality extra virgin olive oil.

It is associated to a reduction of  blood pressure, improvement of the immunologic system and has antibacterial and antioxidant properties.

Oleocanthal

is responsible of the spicy, burning sensation in high quality extra virgin olive oil.

This type of natural phenolic compound has been found to have anti-inflammatory and antioxidant properties.

Long-term consumption of small quantities may be responsible in part for the low incidence of heart disease and Alzheimer's disease associated with a Mediterranean diet.

Hydroxytyrosol

is a phenolic phytochemical with antioxidant properties. It is mentioned by the scientific committee of the European Food Safety Authority as one of several olive oil polyphenols under preliminary research for the potential to affect blood lipid levels.

It is also responsible for the bitter and fruity flavor in high quality extra virgin olive oil.
